Turkey Chili with Veggies

Serves 8
Ingredient list: 
  • 2 tsp. olive oil
  • 1 chopped onion
  • 1/2 cup corn
  • 1/2 cup carrots (chopped)
  • 1 lb. ground turkey
  • 4 cloves garlic
  • 1 28 oz. can of crushed tomatoes
  • 1 16 oz. can of kidney beans
  • 2 Tbsp. chili powder
  • 1/2 tsp. paprika
  • 1/2 tsp. oregano
  • 1/2 tsp. salt
  • 1 tsp. ground black pepper¬†
Preparation: 

Add olive oil to a pot. Turn up to medium-high heat. Cook onion, corn, and carrots until onion is soft.

Add garlic and turkey. Cook until turkey is brown.

Mix in tomatoes and kidney beans. Stir in additional seasonings.

Add 2 cups of water. Bring to boil. Reduce heat to low and let simmer for 30 minutes.

Eat it all with a big group or freeze some to enjoy later!
