Tossed Chicken Salad

Serves 3-4
Ingredient list: 
  • 2 boneless/skinless chicken breasts, cooked and chopped into 1-inch pieces
  • 1/2 cup strawberries, sliced
  • 1/2 cup tomatoes, chopped
  • 1/4 cup red onion, chopped
  • 1/2 cup walnuts
  • 2 cups lettuce, chopped
  • 2 Tbs. fresh lemon juice

Vinagrette Dressing

  • 1 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 Tbs. dijon mustard
Preparation: 

Combine all ingredients in a large salad bowl.

Sprinkle with lemon juice.

Whisk all the dressing ingredients together and add to salad.

Toss the salad. Serve immediately. Refrigerate any unused dressing in a jar.
