Swiss Chard Tacos
- 2 Tbsp. oil
- 1 1/2 lbs. swiss chard
- 1 cup chopped onion, thinly sliced
- 4 cloves garlic
- 1 tsp. cumin
- salt to taste
- 6 corn/flour tortillas
- taco toppings such as cheese, guacamole, salsa, chopped jalapeños
Bring a large pot of salted water to boil. Meanwhile, slice the chard stalks crosswise about 1-inch. Cut the leaves into 1/2-inch strips.
Cook the stems in boiling water for 2 minutes. Remove with slotted spoon. place in a colander to drain and cool. Cook the chard leaves in the boiling water for 2 minutes, remove with slotted spoon; place in the colander to cool, then coarsely chop.
Heat oil in a large skillet on medium-high. Add the onion and sauté until translucent, about 5 minutes. Add garlic, chard and cumin. Sauté 2 to 3 minutes until heated through. Season with salt. Fill each evenly with the chard mixture and add your favorite toppings.
