Spicy Fish Soup

Serves 8
Ingredient list: 
  • 4 cups chicken broth
  • 2 cups water
  • 1 cup long grain rice
  • 1 Tbsp. canola oil
  • 1 tsp. minced garlic
  • 1/2 tsp. red pepper flakes
  • 1 lb. tilapia fillets
  • lime edges
  • sliced green onions (optional)
  • sliced jalapeños (optional)
  • fresh cilantro

Combine chicken broth and water in a large saucepan, and bring to a boil. Stir in long-grain rice, simmer 20 minutes.

Heat canola oil in a large nonstick skillet over medium-high heat. Add garlic, red pepper, and fillets; sauté 5 minutes or until fillets are done. Stir fillet mixture into broth mixture.

Divide soup evenly among 8 bowls, and serve with lime wedges. Top each serving with onions, cilantro and jalapeño, if desired.
