Southwest Egg Bake
- 1 Tbsp. oil
- 1/4 cup onion, finely chopped
- 1 small jalapeño, seeds removed and minced
- 2 cloves garlic, minced
- 1 cup sweet potatoes, peeled and grated
- 1 lb. ground turkey
- 1 Tbsp. chili powder
- 1/2 cup salsa verde (green salsa)
- 12 eggs
- salt and pepper to taste
Preheat oven to 350˚F. In a large pan sauté the onions and jalapeño over medium heat until softened. Add the ground turkey, sweet potato and garlic. Cook until turkey is browned and sweet potato is soft.
Add the chili powder and salsa. Stir and cook until heated through. Season with salt and pepper as needed.
Spread the meat mixture evenly on the bottom of an 11x17" baking dish. In a bowl beat the eggs and then pour over meat mixture. Cover with aluminum foil and bake for 30 minutes. Uncover and bake an additional 10-15 minutes or until eggs are set.
