Grilled Potato Slices

Ingredient list: 
  • 1 1⁄2 lbs. potatoes
  • 3 Tbsp. oil, divided
  • salt and pepper to taste 
Preparation: 

Heat the grill to medium-high.

Scrub the potatoes. Slice them into 1⁄2-inch planks and place them in a Ziploc gallon bag.

Add 2 tbsp. oil, plus salt and pepper to taste. Seal the bag and toss gently to coat the potatoes.

Grill the planks, with the grill covered for 6 to 8 minutes, turning once or unJl almost tender.

Drizzle with the remaining oil and serve immediately.
