Fruity Banana Bread
- 8 Tbsp. butter (1 stick) softened
- 2 cups flour
- 1 tsp. salt
- 1 1/2 tsp. baking powder
- 3/4 cup sugar
- 2 eggs
- 3 very ripe bananas, mashed with a fork
- 1 tsp. vanilla extract
- 3/4 cup blueberries (or sliced strawberries)
Preheat oven to 350˚F. Grease a 9x5 inch loaf pan. With a mixer cream butter and sugar, add eggs one at a time until smooth. Add vanilla and bananas to this mixture, mixing well.
Combine dry ingredients. Stir into banana ingredients, just until mixed. Add the berries, mix gently.
Pour into loaf pan and bake 45-60 minutes until a knife inserted in the pan comes out clean.
Cool 15 minute before removing, store in wax paper.
