Chicken Stir Fry with Broccoli
- 1 lb. chicken breasts cut into strips
- 2 Tbsp. olive oil
- 4 cups veggies (broccoli, peppers, onions, carrots- fresh or frozen)
- 1 1/2 cups chicken broth
- 3 Tbsp. soy sauce
- 3 Tbsp. cornstarch
- 2 tsp. sugar
- 1 1/2 cups rice
Add olive oil to skillet over medium high heat. Cook chicken until brown.
Add vegetables. Cook and stir until they reach desired crunchiness.
Mix broth, soy sauce, cornstarch and sugar. Add to skillet. Stir to coat everything in soy sauce mixture. Let everything cook for 2 minutes.
Prepare rice according to package. Serve over rice or freeze for later.
