
Chicken Broccoli Stir Fry over Brown Rice
1 ½ pounds boneless chicken breast, thawed
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic
1 pint mushrooms, sliced
1 head raw broccoli
¼ cup fresh orange juice
1 teaspoon honey
1 tablespoon soy sauce, lower sodium
2 cups cooked brown rice (or riced cauliflower)
Cube the chicken into bite size pieces. Pat chicken dry and season with pinch of salt.
Place in pan over medium heat with olive oil until chicken is browned on all sides. Transfer chicken to a different plate while cooking vegetables.
In the same pan, add the onion, garlic, mushrooms, and broccoli until well cooked. Add the cooked chicken breast back to the pan and continue to cook until chicken is done. Add orange juice, honey and soy sauce at the very end. Serve over cooked brown rice or riced cauliflower.
Riced Cauliflower Recipe
1 head cauliflower
1 tablespoon olive oil
Pinch of salt
Grate raw cauliflower with box grater into rice-like texture. Alternatively use a food processor to achieve riced texture.
Heat olive oil in a skillet over medium heat; add cauliflower “rice” and pinch of salt to pan. Cover and cook for 3-5 minutes until heated. Remove lid and fluff with a fork.
